Easy Hummus (5 mins)
I just LOVE hummus! I make my own using fresh soaked and boiled chick peas but you can use tinned of course Ingredients (for a big double batch) - you can halve it! 2 tins (or equivalent fresh) chick peas The juice of 1 or 2 lemons (to taste) 2 tbs Tahini (to taste) 2 cloves of garlic (optional) 1/4 cup extra virgin olive oil 1-2 scant tsp of salt thin with more lemon, olive oil, chick pea water or water Just blend it up and ENJOY!
Chickpeas freezer tip
TOP TIP - Chick peas! I love chick peas and hummus. Tinned ones are great and convenient but the dried ones are much cheaper and they have a better texture and taste. But they do take a little more prep. I batch soak, cook and freeze them by laying the cooked chick peas on a baking tray and freeze for an hour, then pop them in a bag and use them like frozen peas so you don't need to soak and cook them everytime! Please share your favourite chick pea recipes!
How to make Kefir Yoghurt
Kefir (fermented yoghurt) is cheap and easy to make and is SO good for your health as well as being delicious. Here I make it with soy milk but the kefir grains do need to be fed cows milk to thrive, so make sure you do a cows milk kefir every few times you make it if you are vegan. I have some spare grains to give people if you want some and live local, otherwise you can buy them on the internet Happy fermenting!
